Can a Vegetarian diet be better for a Hypoglycemia?

I have become Hypocglycemic after gastric bypass over 5 years ago, had a left nephrectomy and adrenalectomy from cancer. Now have Hemochromatosis in liver. Have to watch iron intake, but have probem with low protein. Don't want to develop diabetes, blood sugar gets very low. I thought maybe trying a vegan diet might help. I have problems now with dairy too. Have seen 3 endrocrinologists and 5 dieticians. No answers, just lists of food exchanges. Help please.,

Already Tried:
eating more eating less, extend bars, Nutrisystem and got worse, no dairy, no gluten, added more carbs more meat, juice and peanut butter in emergancy.
