When you are on Coumadin, you can eat a regular diet; the key is that you should be consistent. Green leafy vegetables contain Vitamin K. Vitamin K causes clotting. The flip side is that you need green leafy vegetables because they are healthy, so your intake should be steady and your Coumadin dose can be regulated around your normal dietary intake.
Often patients will "binge" on green vegetables and this causes fluctuations in how thin or thick the blood becomes. This happens a lot in the summertime when the vegetables are fresh. Some patients avoid this health food, thinking that they are "not allowed", but this isn't really the case...just be consistent.
There are no foods that you should particularly try to eat either, it's more an issue of avoidance of binging as mentioned. If you diet changes, it is best that you just tell your healthcare provider and get your Coumadin level checked sooner than it might be regularly scheduled.
Below is a link with a list of foods that contain Vitamin K, so you can make a list and know when you may have eaten more than you normally do. This list also gives some good information about avoiding certain vitamins that you shouldn't start if you are not already taking them. You may want to print this to keep on hand.
We always advise also, that if you are taking a multi vitamin, ask the pharmacist to recommend one that does not contain Vitamin K. Sometimes this is overlooked and cause the necessity for higher doses of Coumadin than might be otherwise needed.
